Massimo Bottura, one of the world’s most influential chefs, has become one of the most passionate voices on the topic of food waste and sustainability in recent years. Bread is Gold is a timely and
inspiring volume that educates home cooks on how easy it is to transform would-be discarded ingredients into delicious meals.
The book documents Bottura’s intial foray into the world of sustainability and food waste with Refettorio Ambrosiano, a community kitchen which opened during the Milan Expo in 2015, involving leading Italian designers and artists to renovate an abandoned theatre into a community hub. The Refettorio was established as a safe space where visitors could receive free meals, advice and support in a relaxed and welcoming environment. The idea was part of his ‘Food for Soul’ project, a non-profit set up by Bottura that seeks to eliminate food waste in support of social inclusion and individual well-being.
Over the course of the Milan Expo and beyond, the Refettorio hosted over 60 of Bottura’s chef friends visiting and cooking for its visitors – with each chef preparing three course meals from everyday ingredients that would otherwise be discarded by local supermarkets.
Bread is Gold records these visits to the Refettorio by the world’s best chefs and the book documents the time that each chef gave and the recipes they created.
