Smith & Baxter is delighted to announce we are working with Roth Bar & Grill at Hauser & Wirth Somerset, the pioneering world-class gallery and multi-purpose arts centre in Bruton.

Housed in the old cowshed of Durslade Farm on the grounds of Hauser & Wirth Somerset, Roth Bar & Grill combines gastronomy with art, offering a vibrant, informal eating-place, which serves honest, simple and seasonal food. Led by husband and wife team Steve and Jules Horrell, the restaurant adopts a farm-to-fork practice and works closely with local farmers, gamekeepers and gardeners, to use ethical produce with a focus on sustainability.

Durslade is a working farm and the livestock born and bred there are served at Roth Bar & Grill, including Aberdeen Angus, Wagyu and Hereford cattle, Lleyn sheep and Oxford Sandy and Black Pigs. The meat is dry-aged in a purpose-built Salt Room, lined with over 500 hand-cut Himalayan salt bricks, allowing it to tenderise during this traditional process.

Using an artisan process, the kitchen team also salt cure meats, adding ingredients such as wild garlic and creeping savoury. These culinary herbs are provided by the Kitchen Garden, set out by Jekka McVicar and situated at the entrance of the farm. It supplies the kitchen with year-round seasonal vegetables and edible flowers that are grown with a no-dig method, championed by renowned gardener and local resident, Charles Dowding.

Roth Bar & Grill is committed to connecting guests with the farm, restaurant and gallery activity through a diverse programme of events and workshops. The events calendar includes specialised ‘Uncut’ butchery and ‘Unhooked’ fishing courses and intimate curated dinners with notable chefs and food writers. Collaborative events with Hauser & Wirth Somerset include Open Source Salon, a discussion group for like-minded creatives and enthusiasts who meet to exchange ideas, hear special guest speakers, and enjoy local food and drink.

The 100-cover restaurant opens up onto an outdoor courtyard for another 75 diners throughout the summer months, while the bar seats 20. The rustic, welcoming nature of the space lends itself for private hire, taking in the courtyards, gardens and galleries for special occasions. In keeping with our feasting events, our food is designed to be served in a social style with sharing dishes down the centre of the table.
